In 1858 Antonio Mattei opened his production and sales business in Prato of the typical Prato Almond Biscuits, now commonly known as "Cantucci" or "Cantuccini", and other Tuscan sweet specialties. The historic biscuit factory, while retaining the name of its founder, has been run by the Pandolfini family since the early 1900s, to whom the introduction of numerous preparations, still daily churned out by the laboratory in the historic center of Prato and in the same rooms, is due since 1858. In 2018, on the occasion of the 160th anniversary of the foundation, it was decided to celebrate this important event with the opening of a new store in the heart of Florence. At Antonio Mattei's Bottega Museum you can buy Prato Biscuits with Almonds, called 'Cantucci' and all the products of the historic Biscottificio founded in 1858, enjoy a great coffee accompanied by a 'cantuccio', and visit the small Museum where it is told the history of the Biscuit Factory.
